FOOD PAIRING

Lamb Lollipops for 2 racks

2 French cut racks of lamb
Salt for seasoning
Makes 4 servings

For Marinade
2-tablespoons minced shallots
1-tablespoon micro-planed garlic
2-tablespoon minced fresh lavender
1-tablespoon cracked black pepper
1/4 cup olive oil

French the Lamb Chops
Carefully carve the rack of lamb into lollipops (chops) by standing the rack up on the meat side with the bones curving away from you. Slide a sharp knife down between the bones, cutting gently through the meat.

Make the Marinade
Make a marinade by mixing the shallots, garlic, lavender, pepper and olive oil in a large bowl. Put the lamb into the bowl and gently toss to coat. Place the bowl into the refrigerator and let rest at least two hours.

Grill the Lamb
Pull the lamb from the refrigerator one hour before cooking to help bring up the temperature of the meat. Heat your grill for at least 10 minutes – the hot grill will give a great sear to the meat and help seal in the juices. Place the lamb lollipops on the grill, season with salt, and cook on each side for 2-3 minutes for a nice medium-rare. Remove the chops, season with salt to taste and serve hot.

Serve with English peas, oven roasted tomatoes and Israeli couscous.
